Old Style Keys Sour Seasoning

Mix one pint of Key Lime juice with one tablespoon of salt in a bottle. Leave the bottle uncapped for several days to ferment. When the mixture stops bubbling, it should be capped. Use on conch or fish dishes as a marinade.

1 can condensed milk
4 egg yolks (reserve 1 egg white)
1/3 cup key lime juice
1 14-oz. can condensed milk
1 8-oz. package cream cheese
3/4 cup key lime juice
1 tsp. vanilla
1 package lemon cake mix
1 package lemon instant pudding
1 cup water
1 cup salad oil
4 eggs
2 tbsp. lime juice
12 key limes
1 cup vinegar
1/4 pint water
1/2 cup sugar
Mix egg yolks and milk, then add lime juice. Beat one egg white until stiff and fold into lime juice mixture. Pour into baked pie shell and chill. Soften cream cheese in microwave. Beat in condensed milk, add key lime juice and vanilla. Beat, then pour into graham cracker crust. Chill well. Mix ingredients, then pour into greased 12 x 15 pan. Bake at 325 degrees 45 to 60 minutes, or until done. Mix 2 cups powdered sugar and 1/4 cup lime juice. While the cake is hot, prick the top and spread the sugar mixture over. Soak limes in water for 24 hours, changing water often. In non-metallic pot, boil limes until very tender. Slice, remove seeds, and set aside. Combine vinegar, water and sugar, boil about 20 minutes. Pour over limes. Pack and seal at once. Excellent with seafood or meat.

Mile Markers

Watch for the small green signs with white numbers along the side of U.S. 1, the main highway that travels from mainland Florida to Key West. The MM numbers start at 127, south of Florida City, and end with 0 at the bottom of Key West. The original mileposts were installed along the old railroad route, and the tradition continued to modern times, after the railroad was removed. Most maps and addresses in the Keys include a MM reference.

Helpful Boating Tips
To Estimate Water Depth: You may need a lead line in the Keys. If you don't have one, make one easily by attaching split shot sinkers to a cord, spacing them every 12 inches.
If You Lose Your Rudder: Quickly jury rig a sea anchor. Tie a bucket to a line and drag it behind your boat. If you want to turn to port, tie it to the port stern cleat. If you want to go starboard, switch it to the starboard stern cleat. To go straight ahead, secure the line at the center of the stern.
Quick Repair: A broken fan belt can be replaced temporarily by a piece of line. Tie the line around the pulleys and use a square knot to secure it.
